Sweet n Spicy Sweet Potato Medallions

Rinse and pat dry sweet potatoes (or white sweet potatoes).

Coat in avocado oil – both sides. 

Sprinkle with kosher salt + pepper – both sides. 

Sprinkle with cayenne pepper – be VERY sparing here — it easily overpowers – both sides.

Bake at 400 degrees for 30 minutes until crispy.
