Lemon Coconut Bliss Balls

Blend 3 TBSP maple syrup, ½ tsp vanilla, grated lemon zest (1 lemon’s worth), lemon juice (1 lemon’s worth), 1 TBSP chia seeds, and 1 cup unsweetened cashew butter thoroughly. Wet hands + roll into 1 inch balls. Freeze for 15 minutes. Wet your hands again and roll to coat in ¼ cup unsweetened coconut flakes. Store in freezer.
